Storage and Precaution

  • Sodium Bicarbonate should be stored in a cool, dry place and far away from any source of heat. It begins to decompose slowly at 50’C, releasing carbon dioxide gas.
  • The bags should not be stacked more than 8 layers in height. A suitable distance from external surfaces should be maintained during rainy seasons.
  • It is liable to lumping if exposed to dampness or subjected to high pressure.
  • The storing place should be free of objectionable odors, as the product is extremely likely to pick up odors.
  • Wash thoroughly after handling. Minimize dust generation and accumulation. Avoid breathing dust, vapor, mist or gas. Avoid breathing vapors from heated material. Avoid contact with skin and eyes.

Application of Sodium Bicarbonate Food Grade

1.BISCUITS/ COOKIES

  • In presence of moisture, Sodakarb reacts with acidic ingredients to liberate carbon dioxide (CO2) and decompose into sodium salt & water. These CO2 bubbles act as the open and porous structure of the biscuit.
  • Sodium Bicarbonate also acts towards adjusting the pH of the dough.

2.BREADS/ CAKES/ MUFFINS

  • For soft dough products, acts as carbonation agent to provide leavening
  • Often used in conjunction with one or more leavening acids to produce the desired reaction rate and finished pH.
  • Aids in surface browning

3.JAGGERY

  • Used as clarifying agents to improve the colour profile and jaggery consistency

4.EFFERVESCENT TABLETS/ POWDERS

  • Used with an acidic agent, such as citric or tartaric acid, to cause a reaction that produces carbon dioxide (CO2)

5.MEAT PROCESSING

  • Used for meat tenderizing purposes
